In summary...
To capture sound
All amp sounds come from a Fender Mustang. I use the XLR out directly into an Audio Interface to capture the sounds. Any amp with an XLR would do this ranging from entry level Mustang to Axe Fx III. I'm using a Presonus interface which is properly entry level. I then download a backing track from wherever (https://www.guitarbackingtrack.com/) is quite a good resource. I put the backing track into some audio recording software (I'm using Studio One Artist) and record the guitar against that.
To capture video
I'm using a Canon SL2. Entry level DSLR. It was about £530 with the kit lens new but can be much cheaper used. Any camera will do. I also occasionally use an older go pro which is dirt cheap but amazing quality.
To tie it together
I use Davinci Resolve (video editing software) to blend the audio with the video. On the more recent videos on my channel I've been using a mix of direct audio captured blended with a 20% room mic audio. It seems to reflect the sound pretty well I think!

The sync'ing up thing isn't a problem, infact it's better than the camera having speaker inputs as you can manage the levels much better!
